Eggs (Cold) 48gr
Butter (Room temperature) 30gr
Cane Sugar 20gr
Sea Salt 2,4gr
Charcoal 6gr
Red Part
Starter (Young, active) 40gr
Beet Juice 30gr
Bread Flour 120gr
Eggs (Cold) 48gr
Butter (Room temperature) 30gr

0:00 MIX STARTER, LIQUID, EGGS THEN FLOUR
0:15 MIX BUTTER, SUGAR, AND SALT (ALTERNATING)
0:45 FOLD
1:15 FOLD
2:00 FOLD
3:00 FOLD
4:00 FOLD
- Let it proof in the fridge for at least 12 hours
- Remove from the fridge and shape
- Final proof for 60 minutes
- Fry at 170c using oil with a high smoke point
